Our Empurau are from the rivers of Sarawak in East Malaysia.
The Sarawak river Empurau live in clear unpolluted water environment and the fast-flowing rivers in the state provide a conducive habitat for the fish.
There are various types of the Empurau fish in other parts of Southeast Asia which feed on algae, crustaceans as well as fruits. Only the Empurau from the rivers in Sarawak feed on fruits and berries grown along riverbanks upstream, in particular their staple, the engkabang (tree butter) or illipe nuts which give the fish its buttery texture and aromatic taste.
The Empurau grows about 500gms a year and takes up to 2 years to get a weight of 1-2 kg while for bigger sizes from 3kg to 5k or more it will take over 3 years to grow. That partly explains the reason for its scarce supply.

Sultan Fish
It is known as the Sultan Fish because it was served only to the sultans & royals in the past. The Sultan King Fish is high in Omega-3 oil, the fish has a delicate flesh that offers a sweetness & pleasant savory or umami taste. The best part is the belly, where a layer of fat just under the skin melts beautifully when steamed.
Black Emperor Fish
It is especially tasty as fish & chips or sautéed fish and gravy. The fish is versatile, fish is firm that needs only very little seasoning or garnish, have a mild, slightly sweet flavor, low oiliness & moist, the Emperor fish should be your preferred choice. Fish is high protein, low calorie food, & rich in omega-3 acids.
